There are four breweries on Hachijojima that produce authentic shochu, and each brewery has its own original shochu, including sweet potato, barley, and blends of barley and sweet potato. One brewery, founded in 1914, produces a well-balanced blend of barley shochu with the sweetness and aroma of satsuma-imo, and another produces authentic potato shochu with the aroma and sweetness of sweet potato.
